Me and my family rode our bicycles over to the park and stopped at the local farmers market on the way home. I’m glad that our little one was able to hold the whole container of fresh Guacomole I bought. It was so thick and tasty that I ate the whole thing over the weekend on sandwiches and melba toast. Here’s a great recipe I got from a friend, Beatrice Hernandez, who likes to make her own. She said that this one is pretty close to her own recipe. She uses a molcajete y tejolote, a Mexican mortar and pestle made from volcanic rock to bring out the juices in the mixture. You can just use a wooden spoon or food processor if you like a smooth texture.


1/2 teaspoon finely minced garlic
1 teaspoon finely chopped Serrano pepper
1 1/2 tablespoons chopped white onion
1/2 teaspoon coarse salt
1 avocado
2 tablespoons diced plum tomatoes, seeded
1 1/2 tablespoons chopped fresh cilantro
1 teaspoon freshly squeezed lime juice

Tammi's Microwave Cleaning Tip: Kitchen Cleaning Hints and Tips

Doesn't the microwave get totally disgusting??
Use a medium sized microwave safe bowl (preferrably plastic-so you don't burn your fingers), fill it with at least 2 cups of tap water, microwave on high for at least 5 minutes, may need longer depending on your microwave-but the water doesn't have to be boiling. Leave the bowl of water in the microwave for at least 1 hour WITHOUT opening the microwave door. The steam will soften all that icky stuff and it will wipe right off with some paper towels. Now there's a cheap cleaner:)

Layered Salad

Serves 8 people
(Must be made ahead & refrigerated!)

1 head lettuce, broken
½ cup green pepper, chopped
1 onion, diced
½ cup celery, diced
1 10 oz pkg frozen green peas, thawed but not cooked
2 cups Hellmann’s mayonnaise mixed with 2 Tbsp. sugar
1 4-oz pkg cheddar cheese, shredded
6-8 bacon strips, fried & crumbled (may use packed real bacon bits)
Salt/pepper
Parmesan cheese, grated

*In a bowl, layer first 8 ingredients in order given.
*Chill for 24 hours.
*When ready to serve, salt/pepper to taste, toss & top with parmesan cheese.
